Somebody already mentioned my 2nd favorite from growning up the Fisher, IL - Bunnies. My all time favorite was the small town north of use. The Hoopeston, IL - CORN JERKERS.

My elementary school in Arkansas was the Southside Southerners and our mascot was the stereotypical old, white plantation owner.
a high school across town from mine (Edsel Ford Thunderbirds), was the Fordson Tractors. Our rival was the Dearborn Pioneers, whose colors were orange and black. We called them The Pumpkins.
The tiny town of Watersmeet, Michigan, is the home to the Watersmeet Nimrods.
They used to be my favorite team, but have been bumped for the Corn Jerkers. Hee.
Scripps College (Hi, Pomona!) is a women's college whose mascot is... the Athenas. Scripps is part of a 5-college consortium, three of which are grouped together for sports - Scripps, Claremont McKenna, and Harvey Mudd. Since there are men at CMC and Mudd, they're called the Stags. Yep. Athenas and Stags. Makes sense. :-P
Here in Utah we have the Lehi Pioneers the West Lake Thunder, but by far the most absurd mascot is the Jordan Beetdiggers. http://jhs.canyonsdistrict.org/Jordan_High_School/ Athletics.html
In high school, we didn't have a mascot at all. Why? 'Cause what would you pick, and how would you make a costume, when your name is "The Koncrete Kids"??? Yes, with a K. It was that lame.
In high school I was a Lancer, which was fairly badass, but when I got to college? Hip hip hooray for the Brandeis... Judges.
Oh, Brandeis. How I love you. But your name is just so... lame. We couldn't be awesome, and we couldn't be hilarious. We, like our sports teams, were kind of just WERE.
It could be worse. The Cornhuskers used to be the "Bugeaters" back in the 19th century. Seriously.
My Junior High School, Hyak, was known as the "Totems."
OK, until you realize how utterly unspecific that is.
"Go, generic naturalistic spirit representations!"
Like the Santa Barbara Bannana Slugs, you should rule out as they voted for it as a student body. (Although legend tells that a local caterpillar specie was in the top running until the school's administration deep-sixed it because the concept art looked too much like a marijuana joint.)
I am now a Cornhusker (since August), but started my collegiate career as a Golden Gopher. Wombats? They have claws; they could at least give you a good scratching or a bite (Steve Irwin was bitten by one once on his show). But gophers? And Goldy is not even a proper gopher; he's a six-lined ground squirrel.
If you want a mascot that strikes fear into the heart, though, check out this page of Cornhusker mascots through the ages; I find the first one particularly creepy.

Hey, I went to Cornell, where the team is simply "The Big Red". I mean, that's not even a thing! They usually have a guy in a bear costume as mascot. However, I also live near RPI, where the mascot is "Puckman": a hockey puck carrying a hockey stick, wearing ice skates and a hard hat.
In the southern Wisconsin area we have the Cuba City Cubans, the Portage Truckers, the Monroe Cheesemakers and the Watertown Goslings. Try being tough with a baby goose as a mascot.
Up until my brother's high school years, my hometown carried the wonderous name of the Auburn Dandies.
A nearby town kept their silly name, that of the Millbury Woolies. Their mascot is currently a sheep.
Apparently, in years past, the regional newspaper had a political cartoonist who coined these nicknames, Auburn Dandies because it was a summer cottage town, relatively well off, and Millbury had, well, mills, and the students would work before showing up for class. Therefore, they'd often be walking through town with tufts of fiber stuck to their clothes or hair, and gained the nickname Woolies.
How about the Colon Magi? No really, I'm not kidding!
Colon MI is "the magic capital of the world" and their mascot is a white rabbit with a black tophat. I guess "magi" can mean wise man or magic user.
Our local high school, as well as the college just down the highway, are the Mules. (University of Central Missouri)
I know it's not a team name, but when I was in boy scouts, our pack mascot was the Skunk. I still hate boy scouts...
Okay, first things first. Gauchos are Spanish Cowboys. Second, I was a Bingham High Miner. Not too bad, except there was no town of Bingham, and hasn't been for almost forty years! But our rivals had it worse, they were the Jordan High Beetdiggers.
Sadly, the archivists at Northwestern have recently announced that we were never really called "the Fighting Methodists".
I went to a high school that was the Trinity Shamrocks. Ok, not the worst, especially considering we played against the Boiling Springs Bubblers and the Biglerville Canners.
